The Cardoon is an interesting old fashioned vegetable popular in both France and Italy is related to the Globe Artichoke but the stems are cooked and eaten rather than the flowerheads.
It is the perfect perennial vegetable to grow in the herbaceous border as it can grow up to 1.8m tall and produces a very attractive pink/purple flower with beautiful leaves. It also provides a great source of nectar for bees and other beneficial insects.
